Trip Recipe of the Month: Pizza
Today is National Pizza With Everything On It (Except Anchovies) Day! In honour of the celebration, we bring you everyone’s favorite trip dinner: pizza!
Pizza
2 ½ cups | flour |
2 ¾ tsp | Baking powder |
1 tsp | Salt |
1 tbsp | Oil |
¾ to 1 cup | water |
1 can | Tomato paste (or equivalent dehydrated paste – rehydrated) |
½ tbsp. | Dried oregano |
½ tbsp. | Dried basil |
To taste | Garlic powder |
To taste | Salt and pepper |
1 ½ cups | Shredded cheese |
Veggies, summer sausage, other toppings of your choice |
Combine first five ingredients and mix well until the dough begins to form a ball. Knead until smooth. Divide into two balls for two smaller pizzas. Roll out the dough on a flat surface (Nalgenes make great rolling pins and wannigan lids are great flat surfaces.
Mix herbs into the tomato paste, adding garlic, salt and pepper until it reaches desired taste. Spread the sauce on the dough.
With your pizza partner, top your pizza with cheese, summer sausage, canned pineapple and any fresh veggies you may have on hand.
Wait patiently for your turn at the griddle. Complimenting your leader on their wonderful cooking skills may get you dibs on the next cooking slot.
Cook on the griddle over the fire until dough is cooked through and cheese is melted.
Remove from heat, add hot sauce (if desired) and enjoy!
