Recipe of the Month: S’mores Empanadas

It’s National Empanada Day!  While the empanadas we usually see on trip are usually of the savory variety, we just couldn’t help but share this yummy dessert variation.   While we always say that our food tastes best cooked over the fire, these little guys can also be baked for about 12 to 15 minutes in a 400F oven for at home enjoyment.

 

S’mores Empanadas

2 cups

All purpose flour

1/4 tsp

Salt

8 Tbsp

Margarine or butter

2 Tbsp

egg powder

3 plus 2 Tbsp

Water, preferably cold

1 cup

Chocolate chips

Marshmallows

2 tbsps

Vegetable Oil

Tinfoil (optional)

 

Stir salt into flour.

Add two teaspoons of water to the egg powder and mix until well combined.

Add egg and margarine to flour mixture.  Work into a dough.

Divide dough into twelve balls and roll each ball into a circle about a quarter inch thick.

Place two marshmallows and a small handful of chocolate chips into the centre of the empanada.

Fold in half and firmly pinch all edges closed.

Brush tinfoil with oil and wrap empanadas individually OR brush a large skillet with oil and lay empanadas in the pan.

Cook foil wrapped empanadas over coals OR place skillet on a grill over the fire.

Turn empanadas every few minutes until golden brown on both sides and dough is no longer sticky.

Let cool for a few minutes.

Eat!

Makes 12 empanadas.
