Recipe of the Month: Mac and Cheese
January 20th is National Cheese Day, and we can’t think of a better way to celebrate than by sharing a recipe for Mac and Cheese.
Mac and Cheese
9 Tbsp, plus 1 Tbsp for pasta |
Margarine |
9 Tbsp |
Flour |
2 tsps |
Salt |
3 cups |
Milk (or 1 cup milk powder mixed into 3 cups water) |
6 cups |
Dry pasta (elbow macaroni or penne) |
8 oz |
Cheddar cheese, shredded or cut small |

Onion, diced |
Cook pasta in boiling water until tender. Drain and stir in 1 Tbsp of margarine to prevent it from sticking. Set aside.
Melt the margarine in a large pot.
Add onion and cook in margarine until translucent.
Add salt and stir in flour. Cook until flour is golden brown.
Gradually add the milk (or prepared milk powder in water) and stir until mixture is thick and smooth.
Add half the cheddar cheese to the sauce and stir until melted.
Stir in the cooked pasta and the rest of the cheese.
